Break


"We were on a break!"  Name that TV show quote.  Yep, Friends.  I have been on a break.  A break from blogging.  And I have loved it.  Every last second of it.

Technically, I'm still on that break.  So, I just wanted to blog to let you know I'm still alive.

I'm sure Tony will blog soon to do a catch-up post.  He's good to do that when it seems too overwhelming for me.  I mean, we have Christmas Eve, Christmas, New Year's, and the girls' FOURTH birthday to blog about.  That's a lot to include.  And I'm just not in the mindset yet.  I'm to busy tricking my mind into thinking that going back to school tomorrow is a good thing. 

So for now, enjoy this chilly start to 2010.  And I'll be back...I promise.

Trust your Christmas was awesome and the girls birthday too!! Miss Elizabeth had a Princess Party (with just family - as in those who live in the house)...and it was so sweet...

Hey,
I'm making meatloaf for dinner and I dare you to try to make one this week. Here is my mom's recipe to help you out. Come on do it for your hubby!

Mix together:

1 1/2 pounds of hamburger
1 chopped onion
3 eggs
1 1/2 tsp. salt
1/4 cup of milk
Crush up about a half of sleeve of crackers

Heat oven to 350, mold mixture into a loaf in a pan sprayed with Pam, smother with ketchup and put in oven for 45-60 minutes or until done.

Well in our family, I AM the meatloaf maker. My mother in law won't even TRY. I always do it.
It is actually a bit scary as there is a lot of pressure on me every time to pull of a stellar meatloaf!!
My secret (not really a secret) is chopped onion....it really seasons the meat!!
I use an entire onion chopped up as small as possible with a food chopper!
I always throw in an egg or two (I know, I don't measure..I'm one of those kinds!) and I use oatmeal...not crackers...but quick cooking oats...just toss in oh half a cup or so...until it looks good! I also use salt, pepper and brown sugar...yep! I usually squirt in some ketchup for good measure and sometimes instead I used bbq sauce. MMmmmmm. And then I make a topping with ketchup, a bit of mustard and brown sugar to coat the meatloaf as it bakes.
I'd be glad to make you one...if I ever end up in your (frozen)neck of the woods! :) Hey...I can't talk really...it is in the 30's here right now! (Unheard of!!)

Makes yummy leftover sandwiches and I have also chopped up leftover meatloaf to use on loaded nachos. I am not a big meat eater myself but the kids love it!

Here is my recipe for an AWESOME meatloaf (not bragging, but everyone I make it for really loves it and so do I)...

2 beaten eggs
2/3 cup saltine cracker crumbs (18 crackers)
2 tsp worcestershire sauce
1/4 cup each finely chopped onion and green pepper (optional - I don't use either)
1 - 8 oz. can tomato sauce
2 lbs ground beef
2 tsp brown sugar
1 tsp worcestershire sauce
1/2 tsp prepared mustard

Mix together cracker crumbs, eggs, 2 tsp worcestershire, onion, green pepper, and 2/3 cup tomato sauce. Add beef and mix well.
Place in 9X5 meatloaf pan or shape into loaf in shallow baking pan.
Bake in 350 degree oven for about an hour or until almost done.
While this is baking, mix together remaining tomato sauce, 1 tsp worcestershire, brown sugar, and mustard. Spread over top of meatloaf and bake for another 15-30 minutes or until done.
Let rest for approximately 5-10 minutes before cutting.
Or you can use a crock pot to cook it, too! ;)
