Meatloaf and a crock pot?

So Sarah totally knows my cryptonite.  Meatloaf and crock pots.  (Thankfully, she didn't let you know about root beer *shivers* or hard boiled eggs).  I LOVE to cook.  I LOVE when my kitchen is spotless and I get to whip up a big ole mess!  I think I'm a pretty decent cook, and I love to try new recipes and flavors.

That being said, I cannot boil eggs.  Nope.  The shell sticks.  But I already did that post here.  Not going there again.  THIS post will be for my other failure...meatloaf.  Seriously.  I'd like to meet the person who named it, first of all.  Meatloaf?  A loaf of meat?  YUCK!  Now, don't get me wrong, I love the tasty treat, when someone else makes it.  It just sounds disgusting.  And yes, Sarah's right.  Tony LOVES this meal.  He asks for meatloaf, corn, mashed potatoes, and rolls.  So very basic.  So very easy for me to ruin.

Therefore, Sarah sent out a plea to you, our readers, to give me your meatloaf recipes.  Please go back and read the comments section of my last post.  There are some tasty looking recipes listed!  Then, hopefully, there will be more in the comments for THIS post.  Please post your recipe.  Please help Tony have a delicious meal.  Otherwise, my mom or dad will be doomed to make his meatloaves (is that a word?) for the rest of eternity.

For the record, I made a YUMMY dinner tonight.  Steak with peach and balsamic vinegar glaze, atop a fresh salad with strawberries, walnuts, and blueberries.  I could have licked the plate!  AND I did it all WITHOUT a crock pot!  haha

Ok, ok, bring on the recipes!

P.S.  Tony said for any of the local readers, feel free to drop of a meatloaf for him to sample.  He'd be happy to play judge!

Tooo funny :) Sorry friend, being the good veggie girl that I am, I don't have too many great meatloaf recipes lying around here. I could, however, pass on an excellent veggie crockpot recipe. Mmmm---don't think that would be toooooo tempting to your dear hubby though.

I don't have a special recipe, but I put barbecue sauce instead of ketchup on top and my family LOVES it. :-)

Ok, so I know you have heard of Radfords, right? They have a pre-made meatloaf that you can buy in any size. You form, you bake. How easy is that? Well, I always add other goodies to it, but it's ok on it's own. Even you, Rett, cannot mess that up!*smile* Love ya! Your big Sis that actually cooks...sorry Robin!

I use the same ingredients that everyone else has listed in previous post, but my meatloaf always falls apart when you cut it. I don't know the secret to keeping it together, but Tony still liked it together or not.

I'm with you on the hard boiled eggs - my shells stick - never fails. UGH!

FYI - sisters Renee & Rett, I do make a pretty good meatloaf. Bake it with potatoes and carrots. Quite tasty and Jarrett LOVES it too. The secret to cooking is find one thing you can do really well and make it over and over again. Thats it, thats all I cook--meatloaf. The rest of the time it is Cheerios and Lean pockets.

Okay, so here is my recipe, if you are still looking that is:

Mix together the following very gently. Nothing toughens a meat-loaf like to much mixing. You want the ingredients to be incorporated, but not.
smooshed. Good luck!

2 lbs ground beef
1 cup ketchup
1/2 c parmesan cheese (just the powdery stuff)
2 eggs beaten
1/2 c. bread crumbs (or crushed crackers work too)
Onion powder and garlic powder to taste...I eyeball it, but probably 2 tsp each would work

Bake at 350 for 30 minutes the add topping and cook for additional 10-15.

Topping: Mix together and put on for last 10 minutes of cook time
3/4 c ketchup
1/4 c brown sugar

Meatloaf is not one of my favorites, but the boys love it, so I started adding different flavors. I take ground beef, shredded cheese, salsa and mix it altogether then I add an egg to the mix to help bind it together. You really need to mix it well so you don't have egg pieces. I then put it in a loave pan and bake it on 425 for anywhere 45 minutes to an hour, just need to watch it. It is really moist and sometimes falls apart- you can add bread crumbs or try crushing taco shells up and add them to help absorb the liquid so it don't fall apart.

Boiling eggs: Use eggs that are at least a week old or leave them out overnight before boiling them. Put eggs in cold water and add 1 T. vinegar. Bring to a boil. Turn off heat and leave eggs in water for 10 min. Grandma Anita taught me to avoid the darkness around the yolk, peel the eggs right away. This works every time.

PS - The secret to peeling hard-boiled eggs is not to boil fresh eggs - the older the better :-D
